Salmon Wasabi Burgers Recipe | Spicy Salmon Croquettes
Ingredients:
* 1 pound salmon fillet, skin removed
* 1/2 cup panko breadcrumbs
* 1/4 cup wasabi paste
* 2 tablespoons soy sauce
* 2 tablespoons olive oil
* 2 cloves garlic, minced
* 1 tablespoon fresh grated ginger
* 1/4 cup finely chopped scallions
* 1 egg, lightly beaten
* Salt and pepper to taste
* Sesame seeds and chopped scallions for garnish (optional)
Instructions:
1. Preheat the oven to 400°F (200°C).
2. In a food processor, combine salmon, panko breadcrumbs, wasabi paste, soy sauce, olive oil, garlic, ginger, and scallions. Process until the mixture is well combined and slightly chunky.
3. Add the egg to the mixture and process until just combined.
4. Season the mixture with salt and pepper to taste.
5. Cover the mixture and refrigerate for at least 30 minutes to allow the flavors to meld.
6. When ready to cook, use a 1/4 cup measuring cup to scoop the mixture into balls. You should end up with around 8-10 croquettes.
7. Place the croquettes on a baking sheet lined with parchment paper, leaving about 1 inch of space between each one.
8. Bake for 12-15 minutes, or until the croquettes are cooked through and lightly browned on the outside.
9. Remove from the oven and garnish with sesame seeds and chopped scallions, if desired.
10. Serve the salmon wasabi croquettes on a bun with your favorite toppings, such as lettuce, tomato, and tartar sauce.

Notes:
* For an extra crispy exterior, you can pan-fry the croquettes in a little oil after baking.
* You can also make these ahead and refrigerate or freeze for up to a week. Simply thaw and reheat in the oven or pan-fry before serving.
* If you can’t find wasabi paste, you can substitute with a mixture of mayonnaise and grated ginger for a similar flavor.
