How to Use Keto Simple Syrup

Turn your favorite cocktails keto by replacing your simple syrup with this sugar-free version! This sugar free simple syrup works wonderfully in a Sugar Free Lemonade, a Keto Margarita, a Keto Lemon Drop, or any beverage that requires a simple syrup base! It will keep for a month or longer in the fridge, so mix up a quick batch and have it prepared whenever you’re in the mood for a drink.

How to Make Sugar Free Simple Syrup

For this recipe, you only need two ingredients: Water and liquid monk fruit sweetener. Normally, you would need to boil your water, then stir in your sugar to help it dissolve. With liquid monk fruit, you can skip this time-consuming step! Take any cup of water (I use the filtered water from the fridge), add one tablespoon of liquid monk fruit sweetener, and stir. This can be used immediately or stored in the fridge or countertop. To make a “rich simple syrup,” use 2 tablespoons for each 1 cup of water. This is equal to using 2 cups of sugar per 1 cup of water.

Can I Use Erythritol for Keto Simple Syrup?

In my experience, no, I would not recommend using any product with erythritol in a simple syrup. I love using Lakota’s monk fruit blends with erythritol in my cookies and cheesecake, but it does not work for a simple syrup. Erythritol simply will not completely dissolve–It will appear to be dissolved when the syrup is hot, but it begins to crystallize as the syrup cools down. This will leave you with a very unpleasant drink… Gritty with some super sweet sips and some sips without any sweetener at all.

How to Use Keto Simple Syrup in Cocktails

Keto simple syrup is AMAZING in cocktails and can be used as a 1:1 substitution! In any recipe that calls for simple syrup, you can sub in this sugar-free version using liquid monk fruit sweetener. Just like a regular simple syrup, you can use this method for infused or flavored syrups as well!

Infused Simple Syrups

Here are a few of my favorite infused simple syrup versions:

  • Blackberry Simple Syrup: To add delicious blackberry flavor to any cocktail, boil 2 cups of blackberries in 1 cup of water for roughly 20 minutes. Occasionally mash the berries as they are boiling so they become completely macerated. Remove from the heat and allow to cool for 20 minutes. Strain, add 1 tablespoon of liquid monk fruit, and pour into an airtight jar or bottle.
  • Rosemary Simple Syrup: Boil 1/4 cup of rosemary leaves (stripped from the stem, roughly chopped if you want a stronger flavor) in 1 cup of water for 10-15 minutes. Allow the syrup to cool for about 10 minutes, then strain, add 1 tablespoon of liquid monk fruit, and pour into an airtight jar.
  • Jalapeno Simple Syrup: Simmer a diced jalapeno (or 2!) in water for about 10-15 minutes. The amount of jalapeno depends entirely on your spice level preference… If you only like a little kick, slice 1 jalapeno (toss the seeds) and boil in 1 1/4 cups of water. If you like it hotter, you can add the seeds and/or use 2 jalapenos for a spicier syrup!
  • Basil Simple Syrup: Bring 1 cup of water and 1/2 cup of torn basil leaves to a boil and allow to simmer on low for 15-20 minutes. Let it cool for 10-20 minutes, strain, add your monk fruit, and then transfer to an airtight container in the fridge.
  • Kiwi Simple Syrup: Use 2 cups of chopped, peeled kiwi with 1 cup of water and 1 tablespoon of liquid monk fruit. Boil the fruit in water for 15-20 minutes, mashing occasionally. Allow it to cool for about 20 minutes, then strain, add your monk fruit, and pour into an airtight container.
