Broccoli Cheddar Soup is, in my opinion, the perfect fall comfort food. Filling, warm soup that melts in your mouth as you eat it? Perfection. And this Broccoli Cheddar Soup with Chicken is no exception.
Recipe Ingredients
- 1 head of broccoli
- 2 cups of chicken broth
- 1/2 cup of heavy cream
- 1/2 cup of cheddar cheese, shredded
- 1 pound of cooked chicken
- 2 tablespoons of butter
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat.
- Add the broccoli to the pot and cook until it starts to soften.
- Pour in the chicken broth and bring the mixture to a boil.
- Reduce the heat and let it simmer until the broccoli is tender.
- Use an immersion blender to puree the soup until it’s smooth.
- Stir in the heavy cream and cheddar cheese until the cheese is melted and the soup is creamy.
- Add the cooked chicken to the pot and season with salt and pepper to taste.
