My favorite way to dress up these green eggs is with gluten-free bread and avocado. I toast a piece of my Recipe for Bread with Almond Flour, then I add half a sliced avocado to the plate, which balances my protein with blood sugar-stabilizing fat. This superfood combination will start your day off right.

To make this recipe for green eggs and ham, simply dice up leftover ham and throw it into the green eggs while you’re scrambling them.

Instructions

  1. Place eggs, kale, and salt in a Vitamix.
  2. Blend on high until smooth.
  3. Heat oil in an 8-inch frying pan over medium heat.
  4. Pour egg mixture into the pan.
  5. Cook eggs to your preferred doneness.
  6. Serve.
