Almond Flour Muffins
When the boys were growing up, I made these Almond Flour Muffins for breakfast, serving them alongside Green Eggs, and it was one of our favorite meals back then.

Gluten Free Breakfast
I was always looking for quick and easy gluten free breakfast ideas when the boys were little.
Almond Flour Muffins Recipe
Servings: 4
Ingredients:
- 1 1/2 cups almond flour
- 1/2 cup granulated sweetener
- 3 large eggs
- 1/2 cup coconut milk
- 1/4 cup melted coconut oil
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1/4 teaspoon xanthan gum (optional)
Instructions:
- Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
- In a large bowl, combine almond flour, granulated sweetener, baking soda, and salt.
- In a separate bowl, whisk together eggs, coconut milk, melted coconut oil, vanilla extract, and xanthan gum (if using).
- Add the wet ingredients to the dry ingredients and stir until combined. Do not overmix.
- Divide the batter evenly among the muffin cups.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
