- 2 lbs chicken pieces (legs, thighs, wings, breasts, or a combination)
- 1 cup almond flour
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 2 large eggs
- 1 cup grated Parmesan cheese
Instructions
- Preheat your oven to 400°F (200°C).
- In a shallow dish, mix together the almond flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper (if using).
- In a separate dish, beat the eggs.
- Dip each piece of chicken into the eggs, coating completely, then roll in the almond flour mixture to coat. Place the coated chicken on a plate or tray.
- Line a baking sheet with parchment paper or aluminum foil sprayed with cooking spray. Arrange the coated chicken pieces on the baking sheet in a single layer.
- Sprinkle the Parmesan cheese over the chicken.
- Bake the chicken in the preheated oven for about 30-40 minutes, or until cooked through and crispy on the outside.
- Serve hot and enjoy!
Tips and Variations
- For extra crispy chicken, you can increase the oven temperature to broil (high) for the last 2-3 minutes of cooking. Keep an eye on it to prevent burning.
- Experiment with different seasonings in the almond flour mixture to change up the flavor.
