Introduction to Crock Pot Salsa Chicken
I am a huge fan of my Crock Pot. It can cook just about anything! Candy, sandwiches, pork, soup, chili and even cocoa can all be prepared with it! Talk about an appliance that’s pulling its weight. So when we were craving Mexican the other day, I knew I didn’t want to heat up the house by using the stove or oven. So I broke out my trusty slow cooker and made this Crock Pot Salsa Chicken!
What is Crock Pot Salsa Chicken?
My Crock Pot Salsa Chicken features tender chicken breasts that are seasoned with taco seasoning, your favorite enchilada sauce, spicy salsa and tangy garlic! This meal delivers on flavor while keeping your carb count low- a generous serving is around 4 net carbs! You can use this recipe in a low carb tortilla, in tacos, quesadillas or burritos. This keto Mexican recipe feeds a crowd, so it’s perfect for nights where everyone comes together- you don’t have to be preparing the meal, because the crock pot does it all for you!

How to Make Crock Pot Salsa Chicken
This keto chicken recipe couldn’t be any easier. Just add your ingredients to your crock pot and walk away. That’s it! The only prep work you’ll need to do is chop an onion! This is the perfect weeknight dinner recipe. Start it while you’re at work and come home to a hot meal with almost no effort! This would also be great for keto meal prep- make it over the weekend and you’ve got a low carb lunch all week!
Ingredients
- 2 pounds chicken breast
- 1 cup onion, chopped
- 2 minced garlic cloves
- 1 (1 ounce) package taco seasoning
- 1 cup enchilada sauce
- 1 cup salsa
Instructions
- Spray the bottom of a slow cooker with cooking oil. Place the chicken, onion, garlic, taco seasoning, enchilada sauce and salsa in a slow cooker. Place the lid on the slow cooker and cook on low for up to 8 hours, or high for 4 hours.
- When cooked through, remove the chicken from the slow cooker and shred. Add back to the slow cooker and toss to coat. Top with shredded cheese, green onions, jalapenos or tomatoes if desired.
Variations
You can also make this Salsa Chicken in the Instant Pot. For the Instant Pot, add all of your ingredients and cook on high for 12 minutes. Allow the pressure to naturally release for 10 minutes before shredding. Yes, you can use frozen chicken in the crock pot. I used fresh chicken in this recipe, but frozen would also work fine.
Cooking Time
The cooking time for chicken breasts in a crock pot depends on what you put the temperature setting to. If you’re starting this recipe in the morning for dinner that night, I would cook for 8 hours on the low setting. If you don’t have as much time, set your crock pot to high and cook for 4 hours.
